Ukrainian is the main language.
In the East/North they also speak Russian and Belarussian.
In the South they also speak Romanian.
Wow, first off congrats for wanting to do work in an orphanage. Secondly Ukranian is the official language while Russian is commonly spoken as a 2nd. Even though there official language is in fact Ukranian there isn't exactly a wealth of learning materials for it. So this might make learning the language far more difficult than it already is. For that reason I'd suggest Russian. It has far more speakers and more learning materials as well. If you are learning by yourself first I would recommend that you learn the Cyrillic alpahabet so that you don't have to use the Latin alphabet. Once you do that you can start learning the basics fromall sorts of different options. Podcast like One Minue Russian and a few others (which can be found on iTunes) are great ways to practice while on the go. I agree with the first two answers but Russian is probably the widest spoken language in Ukraine.
Learn Russian - everybody understands it. Ukrainian is so similar to Russian that with 1 year of learning, nobody will be able to tell which one you're speaking anyway ;). The one thing you should do to localize a bit is to learn the way Ukrainians pronounce Russian, with the 'g' becoming 'h' and so on. You'll hear that a lot. My ex-GF told me how funny it was listening to the Ukrainian parliament trying to speak Ukrainian when Ukraine first became independent and they made it the official language. Many people there hardly speak Ukrainian at all.
