  • stir fries and fried rice is simple to make and easily heated. Tuna salad.
    take some cut fresh fruits too.

  • try some fresh fish. pair them with some fresh fruits and simple salads

  • I take extra large crescent rolls and cover them with sauteed ground turkey with veggies. Then I put another crescent roll on top and cook for about 18 minutes per instructions. Great, easy meat pie. You could add a sauce too. They are good cold too.

    I buy small rectangular covered Pyrex type containers so I can reuse them and they are great for microwaves and crowded fridges and they hold things that might leak a bit. (They are cheap too, Target, Walmart type stores.) I also bring pot roast, baked chicken with potato and veggie, ribs, casseroles, all kinds of things. I spend Sunday cooking and then just refrigerate and freeze. It saves money and it's healthier. If you don't have a fridge at work, freeze it and it will defrost by lunch time.

    I find a crock pot is great for making all kinds of stuff. Just dump it in, turn it on and forget about it all day. You can put in cheap cuts of meat and they come out nice and tender. I've even roasted chickens in it. Also good for soups. Then you have a big batch to put up for the week.

  • This recipe makes 4 easy to prepare, healthy sandwiches that will beat any sandwiches you might buy at the store.

    Ingredients

    * 3 tablespoons extra-virgin olive oil
    * 1 tablespoon red wine vinegar
    * 1 1/4 cups chopped seeded plum or cherry tomatoes
    * 1 cup diced seeded peeled cucumber
    * 1 cup chopped green bell pepper
    * 2/3 cup chopped red onion
    * 1/2 cup chopped radishes
    * 1/2 cup chopped fresh Italian parsley
    * 1 cup crumbled feta cheese (about 4 1/2 ounces)

    * 4 8-inch-diameter whole wheat pita breads, halved

    Preparation

    Whisk olive oil and red wine vinegar in large bowl. Season dressing with salt and pepper. Mix tomatoes, cucumber, bell pepper, red onion, radishes, and parsley into dressing. Stir in feta cheese. DO AHEAD: Salad can be made 2 days ahead. Cover and chill.

    Using slotted spoon, transfer salad mixture to pita bread halves. Serve sandwiches immediately.

  • My favorite thing is soup & I lost 30 lbs eating nothing but that before. I like the Campbell's Chunky soups in the large can but that's mostly for convenience. If you have a crock pot you can always just throw in a bunch of stuff & let it cook all day. You'd have tons of leftovers too. Throw in some stock, celery, carrots, whatever you like, maybe leeks, etc. You can get a lot of great recipes at allrecipes.com. I use that a lot. Also try some different stews like lentil. It's healthy, lots of iron & good for the colder weather.

    Also you could try some different casseroles. I normally like more difficult recipes but I made this the other day & it was a HUGE hit:

    Chicken & rice casserole:

    Chicken breast (boneless, skinless) about 3 or 4 is good
    3 cups white rice
    4 regular size (10 something ounce) cans of Campbell's chicken & mushroom condensed soup
    1 package dry Lipton onion soup mix

    Slice chicken into thin strips or chunks (whatever you like) and brown it in a skillet. Set aside.
    Make 3 cups white rice.
    Add the chicken to the rice.
    In a bowl whisk together 2 cans soups, 1 can water, 1/2 pkg of dry soup mix.
    Pour that over chicken & rice & stir
    Put mixture in a greased baking dish
    Make another bowl of sauce (2 cans soup, 1 can water, 1/2 pkg of dry soup mix) and pour over the chicken & rice.

    *I also added cracked pepper & some dried parsley & basil to my mixture plus I topped it with some Parmesan cheese before putting it in the oven.*

    Bake at 375-400 for about 20-30 minutes or until top is brown.
