No, you don't have to bake them first. Just make sure you have them wrap tight so no air get to them.

You can bake them and freeze them (unglazed). Or you can roll them out, put them in a pan, wrap them and freeze them too (unbaked). If you put them in the freezer unbaked, you are going to need an hour to let them defrost to room temp before baking. (so they get a slight rise as well).
