    i love egg drop soup but i dont like wwhen the egg has strong taste. i tried a bunch and hated them. any suggestions?


  • EASY EGG DROP SOUP RECIPE

    Cook Time: 10 minutes

    Ingredients:

    * 4 cups chicken broth or stock
    * 2 eggs, lightly beaten
    * 1 -2 green onions, minced
    * 1/4 teaspoon white pepper
    * Salt to taste
    * A few drops of sesame oil (optional)

    Preparation:

    In a wok or saucepan, bring the 4 cups of chicken broth to a boil. Add the white pepper and salt, and the sesame oil if using. Cook for about another minute.

    Very slowly pour in the eggs in a steady stream. To make shreds, stir the egg rapidly in a clockwise direction for one minute. To make thin streams or ribbons, gently stir the eggs in a clockwise direction until they form.

  • My favourite egg drop soup recipe is more of a stracciatella. I cook two whole garlic cloves with a small piece of ginger in butter until they are fragrant, add three or four cups of chicken stock and bring to a boil. Meanwhile, beat an egg with a 1/4 cup bread crumbs and a 1/4 cup parmasean. When the stock boils, fish out the garlic and ginger and discard it, then drop in the egg mixture, turn down the heat and let the eggs set for about 30 seconds to one minute. Then whisk until they are totally cooked. Then I like to add a little bit of cilantro for colour and flavour, or eat it plain.

    It's very tasty and the egg isn't super over powering because of the strong taste of the other ingredients. They all balance each other out very well. It's also very easy and fast to make.

    Egg Drop Soup is frequently thickened with cornstarch in restaurants. To add a cornstarch thickener, mix 2 - 3 tablespoons of cornstarch with 1/2 cup water. Just before adding the beaten egg, stir in the cornstarch/water mixture, remove the soup from the heat, and then add the beaten egg.
