i know it can be a stupid question, but i need help :(
i have a dedicated server, i cant login as root (directly), but... if i login with my user and write "su -", then i have root access, but i only know to do it in console, and im a newbie in linux :(
in the past, i modify the files owned by the root with WinSCP (files like php.ini or mysql.cnf)
but now i dont know how to do it, and i need to edit some files for mysql optimization :(
any idea? :(

It's in my bash alias file from long long ago so its done automatically now.
To edit a file, you can just type nano filehere

To login as root, you login with a user who has privileges to login as root, then you just type "su" and enter your root password. That is how we do it. Logging in directly as root is security issue. Paul Banks's Journal – Last.fm::

Good point, it's so annoying if you ever edit a long line without using -w and it breaks it into multiple lines.

As for editing the INI you can create a user with root privledges by adding it to the group but if you are using winscp you will be unable to login directly as root, you can infact allow this by editing your sshd_config. There is no real problems logging in directly as root providing you have a secure password.
